There is a good chance any prepared meat isnāt if they have to strictky avoid gluten (a lot of seasonings use binders that contain for example, many marinates have it too, soy sauce for example). One of my the players with the group she told me that gyro meat is not gluten free.

Even without sauce/coating, the spices used in the meat mixture could have gluten. And, since the gyro meat is typically a meatloaf of lamb and beef, there may be things like breadcrumbs in it as a binder. Lots of gyro meat you get in the store will involve a binder for the meatloaf. Traditional restaurants may be less likely to do so, I understand, but better safe than sorry.Do they use any kind of sauce/coating? If so, that's not impossible.

Yes, I do think they use some sort of wheat product in the meat.Do they use any kind of sauce/coating? If so, that's not impossible.
I understand it often shows up in processed foods to increase the protein amount on the nutrient label. I've heard the same with milk proteins too, making them a problem for milk allergies. They sneak it in as āfillersā even in spice mixtures.
I live with folks with celiacs and itās an issue frequently. If there is was a way for them
to use sawdust in place of wheat, it would be that instead
Mostly itās innocent but a barrier for my family.
I've been trying to reverse engineer spice mixes for my family and it astonishes me how many of them randomly add flours of various types to sauces that don't need it as thickeners. But it makes the spice pack seem fuller and for most of the population, it's a harmless addition. They sneak it in as āfillersā even in spice mixtures.
