The expanded weapon user seems like a win to me, as does the animal themed one.

Otherwise, we have the Kung Fu: the TV Show monk, the Last Airbender Monk, the ninja monk, and the Dragonball Z monk: maybe a Naruto monk? You have some otherworldly entity bound to you and you need the monk disciplines to keep it inside you.....

Transcendent Monk - can astrally travel, perceive the 'other world', walk in mid air, a pillar of psychic strength.

Dragon Monks - only available to Dragonborn. Able to use ki to enhance their breath weapons, create fearful presence auras. Gain expanded senses, appropriate elemental resistances and flight as they gain in power.

Love Guru - can substitute Wis when doing Cha-based ability checks, gains Persuasion and Performance (you know what I mean) and gets Expertise in one of them, can use Ki for charm-based effects

The only think I can think of is some kind of brutish monk, one that focuses on strength. They might be easier to hit, but they are also more durable and strike with solid blows against their opponents.

I think this would be a good spot for a Book of 9 Swords style swordsage drawing upon Desert Wind and Shadow Hand. Only not suck like the elemental monk does...
