I dont know, a Mino would be pretty terrifying.

(Also have you looked at the rules for Mino's? Very thematic, I like them quite a bit.)
Yep! I have both Guildmaster's Guide to Ravnica and Mythic Odysseys of Theros (I have every official 5e book), so I'm familiar with the official minotaur race stats. I agree, they're quite good. Some people complain about them being Medium instead of Large, but I don't really care all that much about that. They're cool either way.
(In my homebrew world, I actually have a nation of Minotaurs that conquered the world's biggest forest in order to build a huge stronghold surrounded by an enchanted cold iron labyrinth. They're also obsessed with gold and making armor/weapons out of it.)

I've been thinking on that 'large issue'. It still bugs me a ton. Maybe Large is too big, but I'm sure there's a way to capture this difference.

A minotaur should be much larger than a basic human.
 

I just thought about a funny gag to do with them. As gold is pretty malleable as a metal, their weapons would often warp while in use, making the Minos think they are much stronger then they actually are. :p

That's not exactly why I made Minotaurs in my world be obsessed with gold (it was a combination of it just being cool and symbolizing the Biblical "Golden Calf"), but I'm definitely using that some time in my world.

There is also the minotaur from hades that can get a golden armor for visual aid
