We do have too many dragons, really, but I always like Steel Dragons, myself.

Song Dragons, while just as cool in theory as Steel Dragons, being gender locked always annoyed me.

That said, both of them -CLEARLY- still exist in the setting. They're only Folklore 'cause they have that tendency to hide themselves among humanity.

What are song and steel dragons?
Dragons that spend as much time as possible living among humans in an alternate form. Sometimes they're called "Weredragons" but aren't proper werebeasts.

I just don't get how anything can be 'just folk lore' in the kitchen sink of D&D.
Stories tell of a wondrous time where panes of obsidian glass would show all manner of moving images; people carried small panes of manmade glass on their person that could let them speak to anyone on the planet or deliver any bit of information on any subject imaginable, and; the bodies of long-dead dragons were distilled into a serum that was burned to propel metal boxes on roads of smooth stone.

These stories are, of course, just myth and legend.

That's like saying, "This deli has too many kinds of sandwiches."

If you can find the sandwich/dragon that you need quickly enough, the mere existence of others on the menu should not have much of an impact, should it?

Now I need to stat up a sandwich dragon.
Two dragons walk into a Bar.

Now there's a Beer Dragon.

:p

I just happen to prefer monstrous dragons rather than all dragons being hyper-intelligent immortal companions and the like and Wizards practically never wants to do those, anymore... :( Instead it's "Here's the same exact thing with a different color/material tied to it! Only -maybe- it's alignment is different and it blows bubbles instead of fire. Enjoy!"

For me it's like walking into a deli and finding out -every- sandwich has Mayonnaise on it. I can't stand mayo. The Turkey Bacon Ranch would be -great- just leave off the mayo just this once...? No? sigh Nevermind...

Ah. Less that there's too many dragons, and more that they are the Wrong Dragon? That I can understand.

When I next run a thing that needs dragons, I'm apt to specifically discard the idea that the various types of dragons are species that breed true.

Only in the "we could use more cool stuff" way, I mean we just got (i don't even have it yet) a big book of dragons so it isn't like we didin't just get new toys

Most of that stuff is not actually new, just not updated to 5e outside of unofficial dmsguild kind of stuff. The actually new stuff is Elder Brain Dragon and Eye Drake, both of which are awesome, and maybe Dragon Blood Ooze, I don't think much else is.
