This is one of those threads where most people are going to come in and sing the praises of their favorite system and insist it is perfect for Star Wars. I suspect we will read the word "Cortex" a lot.
"Cortex Prime!" :)

For the kind of space operatic adventure that Star Wars is known for, I do think Cortex would work quite well indeed. Contests and challenges especially bringing a lot to the table/game, and Cortex allows different character types and abilities (and 'power' levels) to play well together.

Scum and Villainy (a BitD game from Evil Hat games) is Star Wars with the serial numbers mostly filed off. Not official, but then not burdened with the need of "Official" either.
I think an FitD system could work for certain eras and certain campaign types/styles. But I'm not sure that it would be quite expansive enough to cover all the types of campaigns that would be possible for the extended Star Wars universe.

For the moment, in our Star Wars campaigns we've been using a system of my own devising (which I've named Aurora). So far it has worked very well across a few different types of campaigns. It allows a good amount of flexibility and player agency/choice and has a quick resolution system to not slow things down while also generating a margin of success (or failure) for narrative and mechanical effects to enhance the story. (I've released a partial set of these rules already, but there's still plenty of beta testing that I'd like to do before considering it done. :) )

Of all the licensed RPGs, Star Wars has constantly eluded me.
Have you tried Evil Hat's Scum and Villainy? One of its three campaign modes is basically "you're the crew of the Millennium Falcon, trying to overthrow the Empire." By default, it's connected to a setting in the book (as is the Cowboy Bebop frame and the Firefly frame), but it would be very easy to just drop it in a galaxy far, far away instead.

Yes, well, Cortex Prime itself is a toolbox, not a single game. We'd have to talk about specific implementations.

I am not sure any one system would do so particularly well, though.

Even for Cortex Prime, I suspect we'd want different implementations for different eras or styles.

“It’s probably Matt Mercer’s fault.”

I've never played it but it always seemed like a lot of fun.

To be honest, it would almost require the exact opposite approach, since travel times and complications are basically non-existant for Star Wars: everything moves ar the speed of Plot.

I wouldn't think that poster specifically meant "develop a journey system like TOR for Star Wars". More "develop a system that evokes Star Wars as well as TOR evoked Middle Earth." Which Francesco did by a very, very, very close and insightful reading of the source material.

Journeys are one of the most significant themes in The Hobbit and LotR, so the resulting system emphasized journeys. So the question for a designer would be "What are the most significant themes of the Star Wars saga?"

(And, no, "put the same two droids into every scene, even if that involves a stealth commando mission on a forest planet" should not be one of those themes.)

With all that being said, I'm ready for a new official Star Wars RPG. Edge studio has the license now, right? How long will that last?
Asmodee makes a lot of card, board, and minis games for Star Wars. I wonder how tied they are to the RPG license? At any rate, I hope its a super long time because I like Genesys myself.

Part of the difficulty is that Star Wars is a lot of things, and not all of them play nice together.
Yeah, use one system to represent the Mandalorian and

Oh, I wasn't disagreeing, I'm sure it would be fascinating. Just almost the opposite vibe.
