I wonder if one of the biggest signs that my groups were different is that we never thought of using 3.5 or PF1e to power game. We just thought it was great to be able to get really close to our character concepts...

The truth is, any game system provides the ability to power game in almost direct proportion to the ability it provides to end up with a character to suit your image (barring games where that's entirely or almost entirely extramechanical in design), because the flexibility to do one is the flexibility to do the other. You can set some guard rails that restrain it a bit, but by the time you've completely prevented it, you've pretty near certainly prevented character designs that innocuous (and in some cases, common).

Yeah thats the issue here, its not the OP's that are the problem.
