The Jiffy mix just needs a second egg and then it’s perfect. One egg like it says on the packet just ain’t enough.
After you add the second egg, you proceed to dump it into the trash. Then, head to the store for the following;
Sugar
Salt
butter
Whole wheat flour
Real corn meal
buttermilk
eggs (in addition to the ones you just wasted)
baking powder (not soda)
Honey
Ear of sweet corn (regular if out of season)
Cast Iron skillet (throw your non-sticks into the trash with your jiffy)
To make;
Set oven to 425 degrees F
Shuck the ear and set to the side.
Put a stick of butter into cast iron skillet and put in oven
Mix the following dry ingredients;
1/4 cup sugar
1 & 1/4 cup cornmeal
1 cup flour
1 tsp salt
3 tsp baking powder
Then, pull skillet and drain melted butter into mixing bowl with the following wet ingredients;
1 egg
2 cup buttermilk
1/4 cup honey
Then, mix wet ingredients into dry ingridents, add the sweet corn kernels, then pour into cast iron skillet.
Put skillet into the oven and set timer for 20 min
After 20min check with toothpick, if not done give another 5 min.
Pull from oven let sit for 2min, then flip cornbread out onto cutting board.
Let sit for 5-10 min and then serve
