While I would rarely say "it's impossible", if Wookiepedia is correct in their timeline, Omega would have been born 32 BBY, and Rey's New Jedi Order would be formed 50 ABY. If we do get Omega, she would be around 82 years old…

Yeah, if she shows up in live action it's more likely in the Mandalorian/Ahsoka period. NJO really is a next generation. To get an idea, Omega is about 12 years older than Luke Skywalker.

I know this is fantasy. However, the idea that the Kaminoans took the DNA of a Polynesian-looking person and enhanced it to look European instead does not sit well with me. I am hoping there is more to the story here – namely, that Omega is not actually a Fett clone.
Honestly, Omega’s white savior undertones are one of the few things I dislike about this show (that and her awful Aussie accent).

Or they're going to completely trash the Tantiss facility and kill Dr Hemlock, and the Emperor will pick up the research from a backup facility - one that doesn't have any record of Omega's significance.

I suspect this is the most likely outcome. Perhaps the Emperor’s backup plan involves genetic material from Master Yoda?

I hope not. I prefer the idea that, while Omega was engineered to facilitate the cloning of Force-sensitives and therefore her blood can stabilise the M-count of a cloned subject, she isn't herself Force-sensitive. This show has managed to be the story of people other than Sith and Jedi, and making Omega a secret Jedi feels like it would cheapen it.

One possibility that occurred to me was a tie-in to one of the early Rebels episodes, Rise of the Old Masters. In that one, the Empire has been keeping Jedi Master Luminara Unduli's corpse preserved as bait so that her residual presence can draw in Jedi. Perhaps the original reason for her preservation - and probably that of other Jedi killed during Order 66 - was to use their tissue in support of Project Necromancer.

I don’t think she is. So far as I can tell the experiment was to add midichorians to the clone blood samples - most of the clones rejected them. The point is to find a way to create a clone that does not reject midichlorians.
Of course Ahsoka suggested the Jedi had it wrong all along, and a high M count isn’t needed.
