Can a rogue sneak attack the ghost of a gelatinous cube?

I'm a little late to the party since Mr Jacobs has already replied, but I did find in the Bestiary Preview under the Swarm subtype entry it specifically listed immunity to sneak attack/precision based damage.

So I guess the answer is "yes, you can sneak attack anything" unless the monster's statblock specifically says you can't.

Correct; the Bestiary will have the full skinny on what can and can't be sneak attacked. The short version, though, is that incorporeal creatures, oozes, and elementals (as in earth/air/fire/water) cannot be sneak attacked.

And generally (maybe some exceptions) all other creatures can be? Constructs, undead, plant creatures, etc... all can be?

I notice you guys kept fortification as-is, and included no sort of weapon enhancement to overcome it, at least for sneak attacks. Which I guess means just like in 3E, by level 25-30 in PF, every creature that wears gear is immune or nearly immune to sneak attack. Joy of joys...
 

Well if you are going into epic levels then you can get an epic feat or item to help with that. And at Epic levels you should have that type of ability. There is nothing so far in core, but that does not mean there will never be anything. By addind the limiting factor they have in magic item availability if everything has Heavy Fortification gear on below epic levels, then it is more of a problem with the campaign style and DM then a class issue.

Correct; the best way to look at it is if a monster's not an ooze, actual elemental, incoporeal, or a swarm (forgot that one!), then unless it says otherwise, you can sneak attack it.

As for fortification... we did indeed keep it as-is, but for the levels of play that the PRPG is designed for, and for the cost that type of armor comes with, I don't suspect it'll show up all that often. It certainly won't be in our published adventures.

When we get around to doing something with epic level stuff, we'll revisit things I suspect.
 

Fortification doesn't work exactly as in 3.5. Heavy Fortification only grants a 75% of negating critical hits, not 100% as it did in 3.5, so rogues have at least some chance of applying sneak damage against someone wearing heavy fortification armor.
 

Cool. As long as it's addressed. And yeah, can't forget the swarms.

(Wow, I never fully realized just how darn much of the MM was immune to the rogue's SA. :) I mean, I knew all of them, obviously, but when you start listing them all out and thinking about it...)

Apart from in City of Golden Death, where some of the skeletons have light fortification.

EDIT: Although, of course, it's not armour, it's intrinsic to the enemies themselves.
