Gnome

Hobgoblin

Minotaur

The way I see it, if I was inspired enough to start analyzing the species, it's a favorite. :)

Sometimes I play humans, and other times I play humans. But then again, I also play humans - depending on the campaign of course.

I used to be an elf person, and then I played dwarves for a while - I loved my dwarf wizard with a big sword. One of my favorite characters I ever played was a highly evangelistic goblin sun-worshipper.

But for the last decade or so I've just been into humans.
That free feat is so juicy!!
Yeah, I expected more Tiefling, but I always though genasi were a niche choice. I think they are conceptually cool, and never got the attention the other 2 planar options got.
The 5e Tiefling feels really milquetoast compared to the 4e one... and it doesn't feel like there's much to them beyond the PHB write up either. I don't get the feeling 5e 'cares' about the Tiefling or Dragonborn the same way 4e did, where their ancestors were part of two major empires that impacted the world and they had tons of support. They don't really feel like they matter anymore.

Genasis always end up in some weird book nobody cares about. If the Genasis had been in Tasha's I'd be interested. But they're like in what? One of those DM book with like 5 pages or player crunch or something? The one about the Temple of Elemental Evil? I don't even know.

Never mind how easy it becomes to hit the situation that led to this quote from a Ranger of mine in 3e when some bozo brought in a Half-Ogre (i.e. something in his favoured-enemy group):

"I've spent half my adult life training up on how to kill these things and now I'm expected to adventure with one?!"
I LOVE IT! That's the perfect response a grizzled Ranger would say if suddenly they found themselves having to work with one of their favored-enemies.

Halflings for being the most actually human; the Heart of the PH races.

Changelings because PC shapeshifters was long overdue.

Aasimar because they've been growing on me recently with a concept of angels 'corrupted' by the introduction of humanity screwing up their perfection and making them interesting.

Runners Up
Tieflings
Rad look, and Hellish Rebuke is the Correct Response to any slight.

Warforged
The Little Black Dress of Fantasy. They can represent so many different concepts and were also long overdue.

Genasi, aasimar, and tieflings for me. I love the whole planetouched thing. And I love elemental themes. I think pathfinder 2e does them way better though. Where they can be applied to any species as a template.

Though I tend to tone them down to fit in my DM's more low fantasy less diverse setting. So for example an air genasi will be a human with blue markings on their skin. Rather than being bright blue all over with crystals growing from their head.
