I'm more interested in niche-filling than specific flavor builds. Right now, a monk or ranger with improved defensive capabilities that allow it to stay in melee and work as a defender/tank is what I'd like to see. The warden archetype and the path of the sumo wrestler are missing from the game. :D

I'd like to see a monk of the enduring mountain. A subclass that focuses on strength and/or constitution.

I'd also like to see a druid circle of the sun. I have it listed in my DnD ideas document but don't really have any ideas for the subclass abilities.

A Warlord.
(You knew it was coming.)

A Ranger subclass that has attack abilities (or controller-type zone abilities), not just skills and knowledge, tied into his Favored Enemies and Favored Terrain

Some sort of fiend-slayer specialist class, with obvious modifications that allow for "any non-natural creature" to be the preferred target.
Maybe some magical enhancement: access to Magic Circle and Banishment theme spells. And a feature where, if they slay an outsider in the Material World, it stays dead; no re-forming in the Abyss / Celestia / Wherever and coming back again later.

I'd like to see a simple magic-user class, for people who want the fantasy feel of a wizard/etc but kinda get analysis paralysis when looking at lists of spells. Yeah I know sorcerer and warlock are pick-your-spells-once, but there's still that once. Maybe something with the mechanics similar to a Battle Master Fighter, spending limited resource points on extra magical effects based around a spammable cantrip.

I mean... Warlock with their 2/short rest (roughly 1/encounter) leveled spells that they don't have to prepare, Eldritch Blast, and Evocations and spells to enhance it... Not to say that more newbie-friendly magic classes or subclasses wouldn't be desirable, but it seems like what you're asking for already exists.
