What weapons do you think will go to what category?
Well, I know Unarmed is an "improvised" attack, which is a proficiency level that falls below Simple -- improvised weapons aren't really intended for fighting with, like throwing a pitcher or swinging a chair, and as such will provide no proficiency bonus but require no proficiency to use.

I would also repeat the reminder that some weapons fall in more than one category, so you can learn them from several different directions -- for example, the Halberd is both an Axe and a Polearm, so either proficiency group counts as being proficient with Halberd.

I'm still hoping even Greatclubs will count as Simple weapons and be available to virtually any class.

Edit: Actually, come to think of it, clubs may count as improvised weapons. I mean, Improvised seems to be the grouping for things you use as a weapon that weren't really intended for that purpose, and a stout club is just a length of wood. 2x4 doesn't belong in a weapon group, so maybe clubs are just improvised.

But what if the club in question is something like a (reinforced) baseball bat? Good grip, decent balance, maybe some nails sticking out of it, made for swinging, basically a wooden mace. I wouldn't call that an improvised weapon any more than I'd call a rusty iron shard a dagger.

Just because many clubs are improvised doesn't mean that all clubs are.

The only weapons that belong in the "unarmed" category are gauntlets and spiked gauntlets. Maybe punch daggers.

Clubs belong pretty clearly in the mace group, I'd say. They might be simple or might be improvised, but maces either way. Assuming the club in question isn't longish and straightish enough to be a staff instead.
