I learned that my tolerance for things like broccoli and spinach changed dramatically over time. This is apparently not uncommon and has part to do with your sensitivity to certain flavor components being different as you age.
(Though given the really broad hostility I see to Brussel sprouts I'm prone to writing any changes off there to the prep and breeding thing...)
