Can I move my regular move, and ready an action to cast magic missile if an opponent appears around the corner...??

Yes. Just be careful with the wording so you don't blast the party thief by mistake as he comes back from a scouting run.

You can ready pretty much any spell, given enough time the spell takes to cast, and if it can target the spot you're aiming it at.

As a corollary to my post, you may want to use non-lethal spells when firing at targets you are not sure of.
