D&D 5E Magic Item Sweat Shop

Here's the pitch.

1) Cast simulacrum to create a copy of yourself. 2) Cast Demiplane to open a dimension to your new workshop. 3) Profit.

If this works as intended the questions is, does your copy need to sleep? If not, could you cut the crafting time down to a third by working three 8 hour shifts per day?

There's nothing that says a simulacrum doesn't need to sleep (or eat, or drink). Therefore, it arguably does unless your DM decides otherwise.

It's an option if you don't have the downtime to make magic items. Of course, you still need the schematic to make the magic item, as well as the gold (and any other components your DM might require). In addition, you give up having your disposable illusion adventuring with you.

It's certainly a use for simulacrum. Not a game breaking use, but not a terrible use either.
 

I've used a similar idea for an NPC in my previous campaign. An archmage downloaded a copy of his memories and personality into a warforged body, then removed everything from its mind not essential to the creation of magic items. He then placed the warforged on the other side of a permanent gate to a different plane where time flows more rapidly than on the prime material plane. This allows his automaton to create magic items in a remarkably short time from "our" point of view. The other realm is referred to as "the Workshop."

Wouldn't crafting magic items at least use up spell slots? I mean I don't remember any rules in 5E for crafting, but would that be a sensible thing that if you are going to imbue magic into an item you have to use some magical energy to do so?

And doesn't the Sim spell say that the Sim can not regain spell slots? So yea, they could make a limited number of magic items, but then you would have to destroy the Sim and cast it again (with it's own cost).

There are rules for crafting magic items in Xanathar's Guide to Everything. They don't require spell slots. If you got the simulacrum the materials, which are stated as not generally being lying around to buy - you typically need to go out on an adventure to gather them - then technically the simulacrum could make them, it seems.
