If you are a full caster losing a caster level is a big hit. I don't see fighter being very attractive at all in the new rules when Paladin or Ranger are available and give you armor proficiency and weapon mastery without losing a caster level.

I am also not seeing a lot of 1-level fighter dips on full caster, but I did not see them a lot on the old rules either. Any time someone dipped fighter in the old rules they usually went to 2 levels, but they were not nearly as common as Cleric for full casters that I saw.
The only reason casters went Fighter2 rather than a single level in 2014 was for action surge, which is no longer relevant to casters in 2024. Fighter1 is still a very attractive dip for casters due to Con save proficiency, which Rangers and Paladins don't get. Rangers also don't get heavy armour.

Most games I play go to 20th level, so the save you really want is Wisdom not Constitution, even on a caster. Some still go for Constitution, but a lot are looking for Wisdom ... and most full casters get that with their Caster class (and Sorcs can get it by starting Paladin).

Fighters (and Paladins) only get heavy armor if you start as that class and to really be effective you need to have a 15 Strength to do it. A Ranger with medium Armor is generally a more attractive dip for many casters IME because dexterity is just better to have (better for saves, better for initiative) and it is usually worth the 1 point difference in AC.

Using 2014 rules Cleric and Sorcerer were the biggest dips I saw for full casters, and usually after level 1, not as a starting class. Fighter was still done, usually as I said with 2-level dips, but not nearly as often on a full caster. Ranger and Paladin were a distinct minority, especially Paladin. I can't remeber ever seeing a 1-level Paladin dip using 2014 rules. Now this is upside down and Paladin and Ranger (along with Warlock) are the classes that are the most common so far for 1-level dips.

I don't allow multiclassing in my game, so I couldn't really say there's been any change.
Wish I had the chutzpah to do this. It's not that I dislike multiclassing itself- I just don't like how 5e handles it.

I considered house ruling it that you had to take 3 levels of you took any, and ofc obeying the multiclassing attribute requirements... But A5E has multiclass feats chains that require 3/3 and incentivize that over dipping. But people still dip, especially fighters in A5E- too good.
