I thought in the movie they even mentioned birds being descended from dinosaurs. (Although I guess it was a fairly new idea the ).

Funny enough, a gory horror-themed Jurassic Park knock-off from around that era, Carnosaur, had them using chickens as a base for their dinosaurs. (This is not a recommendation for that film.)

As I recall, that was a Roger Corman movie well past the period when he was good at making halfway decent cheap SF/horror movies.

Is there some way the population crash due to lower reproductive rates and aging populations can replace the need for a 30 years war or plague?

Aging populations are doing a number on the populations of Germany and Japan. So yeah, eventually.
