D&D 5E Favourite UA subclasses?

I had a lot of fun playing the first draft of the School of Blades Bard. We finished OotA before the revised version hit the streets. But I liked a lot of what they did to polish it up a bit.

I want a toned-down generalist wizard. I actually really liked the samurai fighter. The hexblade is cool but I am uncomfortable with it being a patron (but they sort of painted themselves into a corner). The stone sorcerer is the swordmage but the sorcerer seems like a bad chassis for it. I really liked the deep stalker ranger.

paladin and rogue subclasses are kind of "meh." Cavalier is awful.

Most of them were interesting, but in no specific order:
Deep stalker ranger
Seeker warlock (probably my favorite one)
Phoenix sorcerer
Zealot barbarian

All of those were very flavorful. I'm still waiting for this amount of flavor for the fighter, the samurai was nice, but not suitable for most settings. Monster hunter, sharpshooter, knight and cavalier all fall in the same trap of having only a thin layer of flavor on a bunch of mechanics not fitting the description. Just take a look at me most recent take on the Cavalier and compare it to the Rider from Adventure in Middle-Earth, a look which one evokes the best the image of an expert of mounted combat.

I liked the Horizon Walker, though I would appreciate its fluff being honed a bit.

I think they did a good job honing the fluff of the Oath of Conquest Paladins, so I appreciate that.

Zealot Barbarian (it's a better Berserker than the Berserker)
Raven Queen Warlock (with Find familiar I get two ravens for pseudo Odinness)
Deepstalker Ranger (getting darkvision on a subclass sold it to me, extra spells is great too)
Inquisitive Rogue (A Sherlock Holmes rogue? I'll take one please)
Forge Cleric (A class with rules for making awesome items)
Shadow Sorcerer (I can't remember why I liked this one so much but I remember liking it when I read the article)
Samurai Fighter (it's a little bit like Reese's, "You got your Barbarian in my Fighter!" and man do I like Reese's)

I want a toned-down generalist wizard.

I think it would be a good idea, but I don't understand why the community has such an erratic behaviour towards it...

There has been since the PHB publications quite a few players and DM noticing the lack of an official generalist Wizard option, and wishing there was one.

In UA the designers came up with the Loremaster, but seriously botched it by making it too powerful. I felt almost like they purposefully rigged this subclass since the start so that the feedback would be negative and WotC would have the excuse to shelf it.

And don't tell me that "we already have other ways to represent a generalist Wizard" because this is true for pretty much every character concept, especially for the Theurge which looks like the Wizard subclass we'll most probably get, despite there being already multiclass Cleric/Wizard, Arcane Cleric, and the Magic Initiate feat to represent a hybrid.

You get alot more subclasses with the Theurge then the generalist wizard.

Still I think the Lore wizard should actually focus more on skills, like skill expertise, a bonus spell known, the ability to create a certain amount of scrolls, free alchenlmist set profiency.

Raven Queen was probably my favorite. Other ones I liked were Favored Soul, Lore Master, Phoenix Magic, Scout, and I like the concept of the Celestial Warlock patron, but am undecided how I feel about the implementation
