Regarding domains, Sun is the must have. Without Greater Turning, you cannot called to be a specialist of turning. For another domain, maybe Luck is good. With this combination, you ca re-roll turning check when you use Greater Turning.

Another idea. Make a Monk 1/Cleric X. Now you have very good AC against touch attacks. It will help you fighting against incorporeal undeads.

You may also want to consider taking a level of Ranger with Undead as your favored enemy. Supernatural Blow from MotW basically lets you crit a favored enemy that is normally immune to critical hits. You can also get Favored Critical to have a decent threat range when using a bludgeoning weapon that you have Imp. Crit in and when it has Impact. The Foe Hunter might be pretty good if you take it against undead.

A different option

How about a character who worships a neutral deity who reveres the black/white of the life/death cycle? Take rebuking/commanding instead of turning/destroying.

One of the disadvantages of turning is: when you turn undead they run away, but may come back and attack you and your friends ten rounds later. Rebuked undead sit there awed, and are fairly easy to kill.

And instead of destroying 5 of the 10 undead, how about commanding those 5 to attack the other 5?

Game mechanic-wise, it's evil (which as far as I can tell simply means it is detectable by Paladins). But a character (or a deity) can be ardently anti-undead and not evil.

Turn don't rebuke

One thing to keep in mind when considering the choice between turning and rebuking:

Rebuked, turned, and even commanded undead can be commanded by another cleric (turning and rebuking can be dispelled). There's nothing that can be done about undead that are destroyed though. The Sun domain's Greater Turning combined with a cleric who turns (and destroys) undead is the way to go for an undead fighting cleric.

My recommendation for feats:
Extra Turning
Heighten Turning

If you have feats available, consider
Divine Might
Divine Vengeance (best used in combination with a 2 weapon fighting ranger multi-class)

Items:
Undead bane mace/flail of disruption
Greater Holy Symbol
Undead turning amulet
