D&D 5E New Fighting Styles That Don’t Overshadow Existing Ones

That's more like a feat if you get both. A fighting style is like half a feat in strength.
Well, as I wrote we use the house-rule anyway, but I thought it might be a nice addition to the jousting style. If you don't like it there, add it as a rider to the Mounted Combatant feat.

I'd definitely like to see more fighting styles that give options to certain kinds of fighting, but don't lock character into a particular weapon. Ideally, your fighting style would give boosts to multiple methods of fighting.

Like, personally, I'd change GWF to any weapon, not any melee weapon. I'd change Archery to "ranged attacks with a weapon", not ranged weapons. I'd change Dueling to +1 with any weapon that isn't two-handed, so it stacks with Two-Weapon Fighting. I'd combine Two-Weapon Fighting and Protection, and let that style also treat a shield as a light 1d4 bludgeoning weapon. That sort of thing. Basically, encourage style swapping.

Well the is a school of thought of specific vs general.
Perhaps a fighting style that only affects one or two weapons total might be allowed to be feat strength.

So perhaps if Jousting style only affects laces then it should allow double dice "on the charge".

Your original idea for Jousting was to remove the disadvantage if attacking a target within 5 feet. Increasing damage to 2d12 on the charge was what I was suggesting. Also I should point out it doesn't double damage, we don't want charging paladins doubling their smites as well!

So

Jousting
You do not suffer disadvantage when you attack a target within 5 feet of you with a lance.
In addition, when you hit with a melee attack using a lance after moving at least 20 feet, you can add one of the lance's damage die to the damage roll.

Would conditional advantage be too powerful for a fighting style? Something like:

Polearm Fighting
When you make an attack with a weapon with the reach property against a creature not within 5 ft. of you, make the attack roll with advantage.

Pretty much. I would offer some slight alterations just for wording:

Jousting
You do not suffer disadvantage when you attack a target within 5 feet of you when using a lance. In addition, when you are mounted and move at least 20 feet prior to making a melee weapon attack with a lance, your damage increases to 2d12 for the weapon.

I like it. It makes it useful to real polearms but not applicable to a quarterstaff or spear. Since most oppoennts only have a reach of 5 feet, they will move in and it negates your advantage. However, this also encourages a polearm fighter to remain in the second rank and keep their advantage.

Opportunistic Fighting: Whenever you make an attack as part of a reaction, gain a +2 bonus to the attack roll.

This actually reminds me of a gap that I'd like to see filled: additional reactions. With new subclasses and feats granting more uses for reactions it feels really restrictive only having one. So how about something like this:

Opportunistic Fighting: Whenever you make an attack as part of a reaction, gain a +2 bonus to the attack roll. You can take one additional reaction each round.
